Paleo Recipe: Chicken Soup
The Paleo diet is characterized by the fact that it brings us back to our evolutionary beginnings, where everything was highly organic and natural. Let's remember that we have 2 million years on Earth, and that in the beginning there were no processed foods, much less with toxic components such as today.Chicken soup is a delicious energizer in the Paleo lifestyle, especially after a long day. It has always been a popular remedy for colds and flu. Plus, it's the perfect vehicle for a bone broth.

WHAT WILL YOU NEED?
- 1 1/2 cups cooked chicken, grated
- 1 cup cauliflower, chopped
- 1 bell pepper, diced
- 1 leek, sliced
- 1 medium onion, chopped
- 2 small zucchini, sliced
- 3 medium carrots, sliced
- 2 celery ribs, sliced
- 1 cup diced tomatoes
- 4 fresh thyme
- 2 bay leaves
- 1 handful fresh parsley, finely chopped
- 6 to 8 cups chicken broth
- 3 garlic cloves, minced
- 2 tbsp. Paleo Cooking Fat
- Sea salt and freshly ground black pepper to taste
HOW TO MAKE IT?
In a large pot, melt cooking fat over medium heat and gently cook the onion, garlic, leek, and chicken for about 5 minutes, or until onion is tender.
Add the remaining vegetables: bay leaves, thyme sprigs, and parsley, and cover with 6 to 8 cups chicken broth.
Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
Season to taste with sea salt and freshly ground black pepper.
